At Woodpecker Trail Olive Farm, growers and producers Tracy & Curtis Poling oversee every detail of production—from meticulous pruning and ensuring optimal nutrition for our olive groves to precise hand-harvesting and bottling. Their hands-on approach has led to the creation of internationally acclaimed high-phenolic extra virgin olive oil (EVOO) with less than 0.06% acidity, proudly produced in the USA from estate-grown trees in Georgia.

Rooted in Thomas Jefferson’s pioneering spirit, Woodpecker Trail Olive Farm unites history, sustainability, and modern innovation in every drop. By carefully cultivating rare varietals such as the French Salonenque—discovered during Jefferson’s Mediterranean travels—and expanding our grove to include Italian Lucca and our staple Arbequina olives, we consistently produce award-winning olive oils celebrated for their authenticity and exceptional flavor.

Special thanks to PBS & Farm Monitor and legendary Damon Jones for the great piece on our prestigious international NYIOOC award and olive farm.  While it might be a relatively new crop to Georgia, olives have really taken off over the past decade with more than seven thousand acres planted last year.  When thinking about the best olive oils in the world…places like Spain and Italy come to mind. However, there's now one operation in Georgia that can also make that claim and has the hardware to prove it. We traveled to Woodpecker Trail Olive Farm in Glennville to check out their award-winning product.

Historic Heritage since 1850's

Nestled in Georgia’s Magnolia Midlands along the scenic and historic Woodpecker Trail (State Route 121), our farm is part of a route that stretches through North Carolina, South Carolina, Georgia, and Florida.


Owned and operated by 0Tracy & Curtis Poling, Woodpecker Trail Olive Farm spans 300 acres, carrying forward six generations of family heritage in Longleaf Pine forestation. Since planting our first 6,000 olive trees in 2015, our orchard has grown to over 10,000 trees.


Our focus has always been on preserving the natural beauty of the land while producing fresh, locally crafted, and 100% U.S.-grown extra virgin olive oil. This commitment to sustainability and quality has earned us global recognition—Woodpecker Trail Olive Farm won a Silver Award at the 2020 NYIOOC World Olive Oil Competition, one of the world’s most prestigious olive oil contests. We are also proud recipients of the UGA Flavor of Georgia Award and hold certifications for Extra Virgin Olive Oil.

The olive tree – Symbol of Immortality 


 It was Athens, goddess of wisdom, the wisest of Zeus’s daughters, that had stuck a spear into the ground at the break of civilization, and the spear had turned into an olive tree ...


The importance of olive oil to the people of the world is reflected in past writings and even laws. The Greek poet Homer called it “liquid gold.” The Greek philosopher Democritus believed a diet of honey and olive oil could allow a man to live to be a hundred, an extremely old age in a time where life expectancy hovered around forty years. In the sixth century B.C. the Athenian legislator Solon introduced laws protecting olive trees. In a grove only two trees could be removed each year. Breaking this law incurred severe penalties, including execution. There are more than a hundred references in the Bible to olives and olive oil.  


Olives are hand harvested

  The olive branch signifies peace , because of their slow growth, in ancient times olives were not cultivated during war time and therefore considered as peace-time trees. The olive branch has long been known as a symbol of victory, peace and purity. It has been historically worn by brides, carried by doves and made into wreaths. The use of olive branches as peace symbols has also been extended into treaties. Today, “extending an olive branch” is a phrase often used for when people make efforts to resolve fights or disputes, big and small. Today Extra virgin olive oil is recognized of its tremendous antioxidant properties and health benefits. It also is full of vitamins K and E and  monounsaturated fatty acids.

Our Farm name origins

Historic Woodpecker Trail

The Woodpecker Trail is a 620-mile scenic and historic route that runs along state routes 25/121. It stretches from Charlotte, North Carolina to St. Petersburg, Florida. 


The trail has been named one of the 50 most scenic drives in America and makes for a relaxing day trip as it passes through some of Georgia’s most beautiful farmland. Weathered barns, rusting farm equipment and miles upon miles of open farm land is guaranteed to take your mind off your day-to-day worries. So pack a lunch and a camera and take a drive back in time along one of Americas scenic byways.
